Warming Creamy Coconut Soup🤤 with colourful vegetable toppings

Recipe (makes 2 servings)
Elements:
– 1 medium-sized onion, diced
– 2 tablespoons chopped ginger or galangal
– 1 tablespoon minced garlic
– curry leaves for taste (non-obligatory)
– 2-Three tablespoons curry powder or curry paste or sambal (modify to desire)
– Three teaspoons sugar or maple syrup (modify to desire)
– Three cups vegetable broth
– 1/2 cup coconut milk (or extra for creamier model)
– salt & pepper to style
– oil for cooking, cooked rice for serving
Toppings & garnish recommendations (or of alternative):
– Pan-fried tofu cubes seasoned with soy sauce & black pepper
– crushed peanuts, chili oil (non-obligatory), lime wedges & shredded veggies (purple cabbage, carrot, zucchini)
🌱Warmth a non-stick pot with oil, and sauté onion till translucent, then add ginger, garlic & prepare dinner till fragrant, about 1-2 minutes.
🌱Add curry powder or paste, curry leaves (if utilizing), give it a fast stir. Then add vegetable broth, sugar, salt, pepper & carry the combination to a rolling boil.
🌱Decrease the warmth to medium & simmer for one more minute or so. Style check & season accordingly. Stir in coconut milk & flip off the warmth.
🌱Ladle soup onto rice & serve with toppings & garnishes of your alternative.
