Kale Candy Potato Salad

🍠🌱 a flavour and texture-packed salad, made with kale, quinoa, candy potato and chickpeas completed with a Moroccan impressed spiced dressing. ❤️

👉🏼​Components
1 cup quinoa raw
2 cups water
Four candy potatoes (1 lb)
Three tbsp olive oil
1/2 tsp sea salt
1/Four tsp cinnamon
1/Four tsp cumin
1/2 tsp coriander dried
1 can chickpeas (14 fl. oz/400 ml), drained and rinsed
Three ozchopped kale
1/Three cup goji berries
pinch purple pepper flakes
pinch sea salt and pepper to style

👉🏼Spiced Moroccan Dressing
1/Four cup olive oil + 2 tbsp
1/Four cup lemon juice
Three tbsp orange juice
1 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cumin
1/2 tsp dried coriander
1/Four tsp sea salt
pinch purple pepper flakes

​👉🏼Steps
1. In a saucepan mix quinoa and water. Carry to a boil, then cut back to simmer and prepare dinner quinoa for 12-15 minutes. Fluff with a spoon and canopy with tea towel. Let cool.
2. Preheat oven to 200C/400F. Chop candy potato into small bite-sized cubes and toss in a big mixing bowl. Drizzle with olive oil, sea salt, cinnamon, cumin, and coriander. Combine to mix.
3. Line baking tray with parchment paper and switch candy potatoes onto tray, making certain they aren’t overcrowded. You would possibly want two baking trays for this. Cook dinner for 35 minutes, or till candy potatoes are golden and you may simply insert into the center of the cubes with a fork.
