That is my vegan model of this basic soup,

INGREDIENTS:
. Four cups cooked pearled couscous
. 2 tbsp. vegan butter
. 1 clove garlic minced
. 1 massive carrot peeled and chopped
. 1 small yellow onion chopped
. 1 celery stalks sliced in slivers
. 1/Four cup lemon juice
. 1 tbsp Himalayan salt
. 1/2 tsp contemporary floor pepper
. 1 tbsp oregano
. 1/Four tsp crushed pink pepper
. 5 cups water
. 1-2 cups vegetable inventory (low sodium)
. 12 vegan meatballs pan fried and reduce in half
. 2 cups contemporary spinach
. Handful contemporary parsley chopped
. Garnish: parsley, contemporary oregan & vegan parm

METHOD:

1. Warmth a medium stockpot over a medium flame, as soon as the pan is sizzling , add the vegan butter and let itmelt.
2. Add the minced garlic and sautee till aromatic
3. Add the carrots, onions and celery – prepare dinner for ab0ut 5 -7 minutes , (stirring occassionly )or till the veggies begin to soften.. (add a bit water if it will get to dry)
4. Add the lemon juice, salt, pepper, oregano, pink pepper to the pot and stir
5. Add the water and inventory and produce to a boil. Cook dinner till the vegteable attain the specified tenderness…
6. To assemble: Spoon among the soup right into a bowl, add a couple of spoons of the couscous, add a couple of meatballs, add the spinach and push it iinto the broth in order that it wilts a bit bit. High with the parsley, oregano and cheese.
