Saucy Stir Fry Noodles 🍜

Is there a greater strategy to have fun the top of the week than with some scrumptious (and fast!) consolation meals? It does not get significantly better in my e book though nap and a few cozy films are strong runners up 🎊🎉

I am often making some model of those noodles most weeks (switching up the veggies, noodle sort and throwing in some chickpeas if I do not need tofu). This sort of dish is ideal for a straightforward but decadent feeling meal and you may actually go wild with the veggies (I do know, veggies are tremendous wild!). Me and my kiddo love these and we’ve enjoyable having fun with the dish collectively. I hope you give them a strive too!

Makes 2 servings:
2 servings noodles, cooked, drained and rinsed
half of a 15 oz. bundle tofu, drained, pressed to take away water, and diced in small cubes
Oil and garlic powder for cooking
1/three cup edamame
half cup finely shredded purple cabbage
2 carrots shredded or very finely chopped
Sesame seeds, cilantro and purple chili flakes for serving

1/four cup vegetable broth
1 tbsp darkish soy sauce
1 tbsp sesame oil
1 tbsp maple syrup
1 tbsp rice vinegar
1 tbsp ginger paste or half tsp floor ginger
1/four tsp garlic powder
2 tsp soy sauce
1 tsp sriracha or chili garlic sauce
1 tsp cornstarch + 2 tsp oil whisked collectively

Whisk collectively the sauce elements in a bowl and in the meantime, prepare dinner, drain and rinse the noodles. In a big pan, add the tofu cubes and a little bit of sesame oil (or different oil).

Cook dinner on medium warmth till frivolously browned, then flip cubes and prepare dinner a number of extra minutes then generously sprinkle with garlic powder. Add the chopped carrots and purple cabbage, push to the facet, and add the sauce. Let the sauce bubble for a minute or so till it thickens.

Then add the cooked noodles to the sauce. Gently toss. Serve and prime with sesame seeds, chopped cilantro and chili flakes if desired.
