Lemon Tahini Quinoa Salad

1/Four small crimson onion, finely diced
1 carrot, peeled and diced
1 can black beans, rinsed and drained
1 cup cooked quinoa
1 cup roasted broccoli
6-7 leaves of basil, chopped

Dressing
Pinch of turmeric
1/Four tsp adobo seasoning (elective, however yummy and I exploit eatloisa)
half tsp smoked paprika
half tsp garlic powder
Juice of 1 lemon
1 tbsp apple cider vinegar
3-Four tbsp of tahini (I used soomfoods)
1/Four cup water

In a small bowl mix dressing substances and whisk collectively till easy then put aside. In a medium bowl, mix remaining substances and toss collectively to combine. Pour dressing over quinoa combine and toss collectively to mix properly. Pack with further lemon wedges as desired.

For apple nachos: lower an apple into wedges and coat with a squeeze of lemon juice. Prime with some nut or seed butter then sprinkle with further toppings like raisins, cacoa nibs, coconut flakes, granola or chocolate chips. I used some ginger apple granola from 88acres and it’s soooo good! 🙌🏽
