Fast and simple Vietnamese Chilly Noodle Salad by naturallyzuzu⠀⠀⠀
Components⠀⠀⠀
16 ounces of rice vermicelli noodles or mung bean noodles⠀⠀⠀
three med measurement carrots shredded⠀⠀⠀
Handful of chopped kale (non-compulsory)⠀⠀⠀
2 Persian cucumbers julienned⠀⠀⠀

1/three cup chopped cilantro⠀⠀⠀
1/three cup chopped mint⠀⠀⠀

2 tbsp of coconut sugar or cane sugar⠀⠀⠀
three cloves of minced garlic⠀⠀⠀
2 Thai chilies chopped⠀⠀⠀
2 tsp of salt⠀⠀⠀
Juice from 1 Lime (1 additional for garnish)⠀⠀⠀
2 tsp of sesame oil⠀⠀⠀
Handful of roasted peanuts (non-compulsory)⠀⠀⠀
Technique:⠀⠀⠀
Place the noodles in a big bowl by masking with boiling water and soaking for 10 minutes or till tender. Rinse with chilly water, drain, and add to a big bowl. Add the shredded carrots, cucumbers, bean sprouts, kale, chopped cilantro, mint, onions to the noodles.⠀⠀⠀
In a bowl, combine collectively rice vinegar, sesame oil, sugar, garlic, salt, lime juice and chopped thai chilies. Pour the dressing over the noodles and toss to coat. Add extra lime juice if desired. Sprinkle with extra cilantro, mint inexperienced and roasted peanuts. Take pleasure in!⠀⠀⠀
