On this wet first Sunday of 2021, I can solely consider one cozy basic I need to make! This Additional Creamy Tomato Soup 🍅 with a crunchy Sourdough Grilled Cheese on the aspect! Really easy but so good! What’s your wet weekend go-to meals?
1 28 oz (800 g) can of chopped tomatoes, (I desire hearth roasted)
1 medium onion
1 celery stalk (or 2 small ones)
1 medium carrot
2-Three garlic cloves
1 heaping tbsp vegan butter
1 heaping tbsp all-purpose flour
1 tsp brown sugar (elective)
1 cup vegetable broth
Black pepper to style
(Makes 2 servings)
Vegan greek fashion yogurt/bitter cream
Grilled cheese (I exploit sourdough and vegan cheese slices)
Peel/clear onion, garlic, carrot and celery, and roughly chop the whole lot.
Soften vegan butter in a big pan or dutch oven, and sauté veggies on low to medium warmth for about 15 minutes till aromatic.
Add sugar and flour, and preserve stirring for two minutes, then add chopped tomatoes and vegetable broth.
Deliver to a boil, cut back warmth, cowl with a lid, and let the soup simmer for 15 minutes, stirring often.
Let the soup settle down sufficient to switch it to a mixer and mix till clean.
If the soup is just too thick on your liking, add 1/four cup further water or broth.
Season to style with pepper.
Reheat if needed, prime with some contemporary basil, and luxuriate in!
